Healthy Churro

Churros are one of the things I miss the most after going low-carb. I miss the deep-fried desserts, rolled in an addicting combination of cinnamon sugar. I wasn’t about to give up so I made my own healthy churro – a fat bomb that keeps me full!

Most churros are made with flour, butter, and cinnamon sugar. I rolled my cream cheese mixture in crushed pork rinds to mimic the crunchy exterior. It worked! Dust the fat bombs with a sugar-free cinnamon-sweetener mixture and it tastes just like a churro.

You’ll never look at pork rinds the same way again. They really do work!

Another way to indulge in the classic churro flavor that I love so much is by making an easy keto churro chaffle. It’s hot and crunchy and reminds me of my favorite dessert.

When you are on the keto diet, it’s important to eat plenty of fat to keep your body in fat-burning mode. It trains your body to use fat for energy instead of carbs. Feed your body healthy fats that fuel your body and keep your heart healthy.

Cream cheese is a healthy fat in moderation. As delicious as these fat bombs are, you won’t want to eat more than one or two in a sitting. They really do make you feel full!

The most fun part of this recipe is the delicious crispy churro coating. This is a fun recipe to make with your kids. They will enjoy rolling the fat bombs in the crushed up pork rind mixture.

When you make the churro coating, crush up your pork rinds really well. You can do this by putting them in a sealed plastic bag and rolling over it with a rolling pin. Or let your kids crush the pork rinds in the bag with their hands! They should be really fine crumbs for the best texture on the fat bombs.

It seems crazy to think of pork rinds on a dessert, but the result is pretty amazing!

How To Store Fat Bombs For Easy Snacking

This is one of the best make-ahead snacks you can make! Make a really big batch and store them in your refrigerator so you can grab one whenever you are feeling snacky or craving something sweet.

If you are going to store them for later, roll them in balls without the crispy coating. Then, store them in the refrigerator in a sealed container. Keep a jar of the pork-rind and cinnamon mixture on your counter or in your pantry. When you are ready to snack on one, just roll a fat bomb in the crispy coating.

Believe me, if you try to store them in the refrigerator with the pork rind-coating, they won’t stay crispy.

They will last about 4 days in the refrigerator.

Yields a dozen fat bombs

Ingredients:

Cream cheese
Grass-fed butter
Vanilla extract
Granular sweetener
Cinnamon
Butter
Pork rinds

Instructions:

1. Beat the butter, cream cheese, and vanilla together in a mixing bowl.

2. In a separate bowl, add 1 tablespoon cinnamon, 1 tablespoon granular sweetener, and 1 tablespoon melted butter.

3. Gently swirl cinnamon sugar mixture into cream cheese mixture.
4. Cover bowl and place in fridge to cool for 20-25 minutes.

5. In a small mixing bowl, add pork rind crumbs, heaping tablespoon cinnamon, and 1/3 cup granular sweetener.
6. Prepare a sheet pan with parchment paper.
7. Using a tablespoon-sized cookie scoop, scoop fat bomb mixture onto prepared surface.
8. Roll each individual ball in the pork rind mixture and place back on parchment surface.
9. Serve immediately or store in the fridge in a covered container. (Note: if planning to store, wait until serving to roll in crumb mixture to keep it crispy.
